Introduction

Coffee has a life far beyond its harvest date. For years, we’ve been told that anything “aged” loses its quality and that Seasonal (preached from the mountaintop by the self-anointed coffee prophets) freshness is everything. But through years of real-world testing, we’ve found something different. This project explores how time, temperature, and storage shape coffee’s flavor in ways rarely discussed. Both coffees in this release were roasted from green beans intentionally aged in uncontrolled conditions: exposed to heat, oxydation, seasonal shifts, and the natural passing of time. The goal isn’t to prove a point, but to let you taste for yourself how coffee truly evolves over time. No freezing, no shortcuts, no myths. Just time, truth, and a few coffees that have lived a little longer than most.

Let’s Get Into It!

Connor has spent years experimenting with the aging of both roasted and unroasted coffee—storing samples in extreme temperatures (far beyond what this product experiences) for months and even years. Every test included comparison samples kept in varying conditions, both frozen and unfrozen.

The results? Consistently shocking. Despite what’s often preached online, age has never shown a negative impact on any of Connor’s unroasted coffee samples. Yet many self-proclaimed coffee “experts” and influencers still criticize roasters for keeping green coffee for even a few weeks.

That kind of blind repetition drives us crazy. Too many people in this industry parrot the same opinions without evidence or real-world testing. It’s become a trend built on echo chambers instead of experience.

The same goes for the obsession with color sorters (machines that can cost $50–100K+) and are said to “improve quality.” In reality, tests show their effect is often undetectable in the cup, especially for high-quality coffees that were already meticulously sorted at origin.

And what about quakers?! Those lighter, underdeveloped beans everyone says ruin flavor? In our blind tests, they didn’t. In fact, we found that Ethiopian quakers from washed lots added a sweet, nutty note that tasted fantastic when brewed on their own.

This coffee is our way of saying: screw the haters. Try it yourself. Taste, think, and decide on your own terms.

Why The Blend? Well, we only had 9.5Ibs left of the Rwandan coffee. In order to pull of a great roast, we needed to stretch it with a similar size/density bean that can has similar endothermic and exothermic properties.

Blend Tasting Notes: The green tea/matcha notes are coming off very strong in this coffee. It is rounded off by a lush and rich semi-sweet chocolate ganache mid tone and clean aftertaste. This sweetness can also be attributed to a clean white sugar so prominent in the 33% Bourbon Brazil. Undertones of red berries and dried raisins remain throughout. It is a sweet coffee filled with texture, sweetness, and a whole lot of depth and dimension!

Tasting Notes: Clean Passion Fruit, White Sugar, Refined (A “Cleaner” Natural) though with slight vinegariness attributed to this process. This is tricky to say because it is a clean natural - a very strange coffee indeed! Only when drinking alongside the other very clean coffee (or brewing poorly with too low a dose and too fine a grind) will some people pick up on these “unfiltered” notes.
