Felipe Arcila shares his own take on what his dads White Wine Fermentation process can do on his own farm.

Our previous release (version 01) of this Midnight In New York coffee was from Felipe’s father. Felipe processed this coffee in the same way as Jairo but on his own, separate farm which is also in Quindio, Colombia.

Being the son of the founder of the famed innovative exporting company, Cofinet, Felipe has done an excellent job of showcasing what's possible with his fathers 200hr “White Wine Process” fermentation of a Castillo variety. Making an originally low-scoring coffee transition into a top-tier quality micro lot status! Essentially turning an 82 point washed Castillo into an 88 point 200hr fermented Castillo…Now that’s what we like to call innovative-sustainability in coffee!

This coffee is incredibly textural. Rich & creamy with intense, luscious acidity that may surprise you if you’re unfamiliar with this method. No white wine was used in the fermentation of this coffee...This is all skill!
